Typically run over 2 days it is ideal for people wishing to broaden their knowledge of wine service and applying their skills in real restaurant work environments.  Students learn about the service process, understanding and resolving common customer service problems, how to create profitable wine lists and identify opportunities for increased wine margins, improved costs control and up-selling.

This very practical course also aims to develop students as a valuable wine resource who are not only able to use their own expertise personally but also to channel their knowledge to their colleagues by continually developing and sharing their skills.

Daytime and Evening Course Content and General Information

FAMM Understanding the Five Aspect Meal Model and describing how each affect the restaurant business and guest experience
Wine Service Roles Naming and describing the typical responsibilities of people in the main wine service roles
Service Sequence Listing and competently following the service sequence for white, red and sparkling wines, including wines that need to be decanted.
Customer Service Demonstrating excellent customer service skills by identifying and meeting customer needs  whilst maintaining a pleasant, professional manner when dealing with unusual or difficult customers. Also, handling and resolving customer problems in a way that meets their and the business needs.
Wine Styles and Recommendations for Food/Wine Matching Describe the particular wines on your wine list to customers and providing other details such as origin, production method and information about the producer where appropriate.  Also, applying the principles of food and wine matching to select wines to partner dishes in the context of the guests personal preferences and budget.
Up-selling Demonstrating the ability of maximising sales and optimising the guest experience through up-selling.
Wine List and Staff Development Assist in the creation and ongoing development of a wine list, including offering advice on the selection and pricing of wines to meet customer and business needs.  Also sharing your wine service expertise with other members of the service team in informal training sessions.
Study Materials Students will receive the Level 2 Award in Professional Wine Service Study Guide
Duration of the Course Daytime - 2 days inclusive of examination
Evening - 6.45pm - 9.30pm over 4 consecutive evenings

Daytime and Evening Programme – BOOKING TERMS AND CONDITIONS


Full payment
must accompany the booking form as we do not accept provisional bookings and places will only be confirmed once payment is received.  Bookings will only be accepted on valid booking forms with a fully completed and signed declaration. Payment methods: cheque, BACS transfer or debit/credit cards.

Cancellations of confirmed places are accepted if notification is received in writing up to 12 working days prior to the start of the course.  An administration fee of £60.00 plus vat per student will be deducted.  The remainder of the course fee(s) refunded to the payee. No refund of the course fees will be made for cancellations notified within 12 working days prior to the start of the course or once the course has begun.

Course fees will be refunded in full if the Wine School of Excellence changes a course date or cancels a course if enrolments do not reach the required minimum numbers – notification will be made in the 12 working days prior to the planned start date of the course.

Transfers of a confirmed booking either to another identical course or applicant can be made if notification is received in writing up to 12 working days before the course start date on payment of a £35.00 administration fee plus vat per student.  Within 12 working days prior to the start of the course, no refund or transfer of the course fees will be made. Please note *all transfers are subject to availability on alternative course/examination dates.

Examination dates are fixed to the course onto which you book and any transfer to an alternative date will incur an administration fee of £35.00 plus vat per student.

*All transfer requests must be made in writing or by email (courses@wineschoolofexcellence.co.uk) at least 12 working days before the original examination date.  

Special examination condition requirements due to dyslexia or other medical reasons must be notified prior to the start of the course and supported by a doctor’s certificate or similar document.


Under 18
.  Students and candidates under the legal minimum age for the retail purchase of alcoholic beverages will NOT be permitted to sample any alcoholic beverages as part of their course. This is NOT, however, a barrier for successfully completing this qualification.

Frequently Asked Questions


Q.  How much prior knowledge of wines service should I have before attending this course?


A.  Ideally you should hold at least the WSET Level 1 Award in Wine Service and WSET Level 1 Award in Wine (formerly Level 1 Foundation Certificate) as this course has been devised to expand and develop further students knowledge of wine and wine service.


Q.  What is the recommended self study time for this programme?

A.  The 'practical' exam takes place at the end of the second day session and students are recommmended to review their Level 1 Award in Wine Service and Level 1 Award in Wine (formerly Level 1 Foundation Certificate) Study Guides thoroughly prior to attending the course.
